College Cuisine: Grape-Lemonade Ghostsicles

It’s that spooky time of year again! Halloween is here, when the things that go bump in the night come out once a year and bowls of candy are just a doorbell ring away. Here’s a scary healthy frozen treat to get you in the holiday mood for your all-night horror movie binge:

Ingredients:

  • One cup grape juice
  • 3/4 cup lemon juice
  • 2/3 cup sugar
  • 12 raisins
  • 24 small honeydew melon balls (from a full melon)

Materials:

  • Popsicle molds
  • 12 popsicle sticks

Instructions:

In a medium bowl, whisk together both juices, sugar and 1/2 cup water until sugar dissolves.

Slightly flatten each raisin and press one against flat side of each melon ball.

Using a skewer, wedge two melon balls, raisins facing out, in bottom third of each of twelve ice-pop molds.

Pour juice mixture into each mold, insert popsicle sticks and freeze until solid. This should take no less than three hours.
